
How to tell when a mandarin is ripe
The colour of a mandarin does not always tell the truth. A green mandarin can be perfectly ripe inside.
Signs of ripeness
Weight. A ripe mandarin weighs more than expected. The segments are full of juice.
Firmness. Should yield slightly under pressure but spring back.
Aroma. Rub the peel gently. A ripe mandarin smells before you open it.
Colour. Uniform orange is a good sign, but early-season Valencia mandarins may have partially green skin and be perfectly ripe.
What does NOT indicate ripeness
Shine. Valencia mandarins without treatment have matte, natural skin.
