
Pumpkin and orange muffins — easy recipe with vegan option
Muffins that taste like autumn. The pumpkin provides moisture and texture, the Valencia orange the aroma and freshness. 20 minutes prep, 30 minutes baking. With egg or vegan (chia seeds). Both versions work.
Ingredients (about 14 muffins)
— 170 g pastry flour, 95 g wholemeal flour
— 75 g brown sugar, 1½ tsp baking powder, ½ tsp bicarbonate
— 1½ tsp cinnamon, ½ tsp nutmeg, ⅓ tsp ground cloves
— ½ tsp salt
— 2 eggs (vegan: 6 tbsp chia seeds + 2 tbsp water)
— 230 g pumpkin purée, 60 ml orange juice
— 40 ml plant milk, ½ tsp orange zest
— 70 pistachios, 2 tbsp olive oil
Method
Sift flours with spices. Mix liquids separately. Combine without over-mixing. Bake at 190 °C for 30 minutes.
