Mandarin marmalade has a flavour between sweet and slightly bitter — making it far more versatile than a jam jar suggests.
1. Toast with goat cheese and mandarin marmalade
Toasted sourdough, creamy goat cheese, a spoonful of marmalade and some rocket. The salty-sweet-bitter contrast is addictive.
2. Glaze for chicken or pork
3 tbsp marmalade, 1 soy sauce, 1 vinegar, 1 chopped garlic clove. Brush on in the last 10 minutes of roasting.
3. Filling for crêpes
Warm 2 tbsp marmalade with a splash of fresh mandarin juice. Pour over hot crêpes.
4. Salad vinaigrette base
2 tbsp marmalade, 3 olive oil, 1 cider vinegar, salt, pepper. Emulsify with a fork. Great with nuts, blue cheese or avocado.
