
Sauces with mandarin marmalade — 3 quick recipes for meat and fish
Mandarin marmalade is not just for breakfast. It is a sauce base that in five minutes transforms a meat or fish dish into something restaurant-worthy.
1. Dip for breaded chicken or prawns
Half a jar of mandarin marmalade, 2 tbsp honey, 2 tbsp Dijon mustard, 1 drop tabasco. Mix and warm. Serve immediately.
2. Sweet and sour mandarin sauce
Juice of 3 fresh oranges, 3 tbsp melted butter, 3 sugar, 3 water, 1 flour, half a jar of mandarin marmalade, salt and pepper. Heat water and sugar. Add juice. Stir in marmalade. Mix flour with butter and add. Stir until thickened. Perfect with pork or duck.
3. Mandarin vinaigrette for salads
2 tbsp Greek yoghurt, 2 mandarin marmalade, 2 olive oil, 1 tsp mustard, 1 sugar, salt, pepper, 1 chopped garlic clove. Mix well.
