Mandarin mousse — easy recipe with fresh Valencia mandarins

If you want a dessert that takes fifteen minutes and silences the table for a moment — because it is that good — this mandarin mousse is the answer. Four ingredients, one saucepan, a blender and real mandarins. Not from a carton.

The secret is not the technique. It is the mandarin. A fresh Valencia mandarin, freshly squeezed, has an aroma and flavour that no industrial juice achieves. In this recipe, the mandarin is the lead — not the garnish.

Ingredients (serves 2)

— Zest of 2 mandarins
— Juice of 5 mandarins (about 200 ml)
— 3 tablespoons almond cream
— 1 tablespoon kuzu (or cornstarch)
— 1 tablespoon agar-agar powder
— 2 tablespoons rice syrup (or honey)
— A pinch of salt
— A small glass of water

Method

1. Combine all ingredients in a saucepan.

2. Bring to a boil while stirring. Reduce to minimum and leave for 15 minutes.

3. Blend until smooth, with no lumps.

4. Pour into moulds or glasses. Cool for 30 minutes at room temperature, then 30 minutes in the refrigerator.

5. Turn out and decorate with a drizzle of honey or fresh mandarin segments.

Notes

The agar-agar gives the mousse texture without eggs or cream. With conventional gelatine, proportions change.

With seasonal mandarins (November to March), the flavour is more intense.

For a more indulgent version, add a tablespoon of pure cocoa before blending. Chocolate and mandarin get along absurdly well.

Frequently asked questions

Does it work with supermarket mandarins?

Yes, but the result is not the same. A ripe-picked mandarin has more juice, more aroma and more natural sugars. In a dessert where the mandarin is the main ingredient, quality matters.

Is it vegan?

Yes. All ingredients are 100% plant-based. Agar-agar replaces animal gelatine and almond cream replaces dairy cream.

How long does it keep in the fridge?

Two days in a sealed container. After that, the texture deteriorates.
