
Salt cod and orange salad — Mediterranean recipe with fresh citrus
The salt cod and orange salad has been part of Mediterranean cooking for centuries for a simple reason: it works. The salt of the cod, the acidity of the orange, the olive oil that brings it all together.
What it needs is an orange that tastes like an orange. A Valencia orange picked at its peak.
Ingredients (per person)
— 100 g desalted salt cod, flaked
— Half a Valencia orange
— Fresh spring onion
— Black olives
— Extra virgin olive oil
— Vinegar
— Sweet paprika (optional)
Method
1. Soak salt cod in cold water for 24-48 hours.
2. Peel the orange removing all white pith. Slice into rounds as the base.
3. Flake the cod over the oranges. Add chopped spring onion and olives.
4. Dress with olive oil, a splash of vinegar and a pinch of paprika.
