Orange cakes

Today's recipe is typical of the area of Puerto Lumbreras in Murcia. These orange cakes are delicious and very easy to prepare. Ingredients:

  • 6 eggs
  • half a kilo of sugar
  • half a liter of orange juice orange juice from citrusricus.comfreshly squeezed and strained
  • half a liter of extra virgin olive oil
  • 2 tablespoons of baking soda
  • flour (as much as it admits)
  • 2 lemon rinds
  • sugar for sprinkling

Preparation:

  • Heat the oil in a frying pan. Once it is very hot, add the lemon rinds and leave for a few minutes so that the oil takes on the flavor. Remove from the heat and wait for it to cool. Strain the oil carefully and set aside.
  • Pour the eggs in a large bowl and beat them at medium speed. When they are well beaten, add the orange juice. orange juicethe orange juice, the oil, the sugar and the baking soda. Beat until well blended.
  • At the end, add the flour and continue beating. Gradually add as much flour as needed until a dough is formed, neither soft nor hard, at the point of being able to work with it without spreading.
  • Once the dough is ready, preheat the oven to 200º. Next, prepare a tray lined with baking paper and distribute the dough in small mounds. Separate about 5 cm approximately.
  • Bake for 10 - 15 minutes and check with a toothpick if they are cooked.
  • Once done, remove from the oven and let cool on a wire rack. Continue with the rest of the dough in the same way until all the dough is finished. The resulting number of cakes depends on the size you give them.
