Oven roasted chicken with mandarin oranges

  • 1 whole chicken of approx. 1 kg (it also depends on the number of guests), if it is free-range, the better.
  • 1 or 2 onions
  • oregano and thyme
  • 2 tablespoons of olive oil
  • 4 tangerines with skin which do not undergo any type of chemical post-treatment
  • salt and pepper


  • Preheat the oven to a temperature of 200º.
  • Clean the chicken carefully and remove all the small feathers that come with it, wash it under the tap inside and out.
  • Dry the chicken with kitchen paper and season with salt and pepper.
  • In a small bowl, mix the oregano, thyme and olive oil with the juice of a tangerine. Coat the chicken with this mixture.
  • Place the sliced onions in a baking dish, sprinkle with salt and place the chicken on top.
  • Add the remaining sliced mandarin oranges with the skin on the sides.
  • Bake the chicken for approximately one hour, after 15 minutes lower the oven temperature to 180º.
  • If you like the skin very crispy at the last minute you can give it a couple of minutes of grill.
  • When it is well browned, turn off the oven and let it rest for ten minutes before serving.
