Ingredients

  • 500 gr of carrots

  • cream
  • extra virgin olive oil
  • salt
  • pepper

Elaboration


- Put a couple of tablespoons of olive oil in a saucepan. Cut the onion into thin julienne strips and sauté it in the oil.
- Peel the carrots and cut them into thin slices. Fry them together with the onion.

- Season with salt and pepper.

- Add the zest of an orange and a mint branch.

- Cover with the broth and let the vegetables simmer.

- When they are tender (about 15 minutes) remove from the fire, add the juice of the oranges and beat until we have a very fine cream.

- Garnish with cream.
