INGREDIENTS

  • 3 eggs
  • 1 Greek yogurt
  • 150 grams of sugar
  • 2 teaspoons vanilla sugar
  • 120 ml of mild olive or sunflower oil
  • 50 ml orange juice orange juice
  • 150 gr flour
  • 1 teaspoonful of yeast
  • orange extract (optional)
  • powdered sugar for decoration

PREPARATION

In a bowl, beat the eggs, then add the sugars and the yogurt and beat again.

Now add the juice and the oil and beat again. If you are going to add extract you can do it in this step. This cake is easy to mix by hand but if you have a mixer you can use it.

On the other hand, mix the flour with the yeast and add it to the previous mixture.

Be careful not to leave lumps.

Put this mixture in a microwave-safe silicone mold. NEVER put in the microwave a metal mold, yes, we all know that but there is always someone clueless, I warn you.

We put the cake mixture in the microwave for five minutes at 600 w (my microwave has three power levels, so I put it in the middle).

When finished, we put it another five minutes but this time at 850 w (in my microwave, on the highest level).

Once these last five minutes are over, let it stand without opening the door for five more minutes.

Unmold when cool and sprinkle the powdered sugar on top.

This cake is so easy and quick to make that you have no excuse... besides, you will love it!
