Carrot and Orange Cake

Carrot and Orange Cake


  • 1 cup flour
  • 1/2 cup whole wheat flour
  • 1/2 cup oatmeal
  • 1/2 cup sugar
  • 1.5 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • zest of 1 orange from
  • 1 cup grated carrots
  • 1 egg
  • 3/4 cup orange juice
  • 1/4 cup sunflower or canola oil


  • First preheat the oven to 180º C and grease a rectangular baking pan with a little oil.
  • In a large bowl, mix the flours, oats, sugar, baking powder, baking soda and salt.
  • In another bowl, mix the egg, oil and orange juice.
  • Then add the grated carrot to the dry ingredients and mix everything well.
  • Add the liquid ingredients to the dry ingredients and mix everything well.
  • Then pour the batter into the pan.
  • Bake for approximately 55 minutes. You can check with a wooden stick if it is done (when it comes out clean).
  • Remove the cake from the oven and let it cool for about 10 minutes inside the mold.
  • Then unmold on a wire rack. When it is cool, it is ready to serve.
