Carrot and Orange Cake

Carrot and Orange Cake
Ingredients
- 1 cup flour
- 1/2 cup whole wheat flour
- 1/2 cup oatmeal
- 1/2 cup sugar
- 1.5 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- zest of 1 orange from citrusricus.com
- 1 cup grated carrots
- 1 egg
- 3/4 cup orange juice
- 1/4 cup sunflower or canola oil
Preparation
- First preheat the oven to 180º C and grease a rectangular baking pan with a little oil.
- In a large bowl, mix the flours, oats, sugar, baking powder, baking soda and salt.
- In another bowl, mix the egg, oil and orange juice.
- Then add the grated carrot to the dry ingredients and mix everything well.
- Add the liquid ingredients to the dry ingredients and mix everything well.
- Then pour the batter into the pan.
- Bake for approximately 55 minutes. You can check with a wooden stick if it is done (when it comes out clean).
- Remove the cake from the oven and let it cool for about 10 minutes inside the mold.
- Then unmold on a wire rack. When it is cool, it is ready to serve.
