Orange pancake with cream cheese and granola
Ingredients
- 1 ½ cups flour
- 1 cup granola
- 1 ½ teaspoons baking powder
- ¼ teaspoon baking soda
- ¼ teaspoon salt
- 1 medium orange from citrusricus.comorange, peeled, boiled whole for about 10 minutes
- 1 tablespoon candied tangerine peel
- juice of half a lemon (for the milk)
- 1 cup of sugar
- 2 eggs
- 75 g butter, room temperature
- ½ cup of milk with the juice of half a lemon
- 60 g cream cheese (3 heaping tablespoons)

Preparation
- Boil the orange for about 10 minutes in water that covers it. Let it cool.
- Sift the flour with the baking powder and salt. Add the granola and stir well. Set aside.
- Beat the butter, cream cheese, sugar and eggs on high speed until pale and creamy (about 7 minutes).
- Blend the orange (remove the poles, seeds and a little of the peel) with the milk mixed with the lemon juice and the candied mandarin strips (if you don't have it can be grated or don't put it) at high speed until you have a homogeneous, well ground, thick mixture.
- Add the flour mixture at low speed alternating with the orange liquefied and the milk until well integrated.
- Grease and flour a pancake pan.
- Pour the batter and bake in a preheated oven at 175° C for 50 minutes or until done (do the toothpick test).
- Let cool on a wire rack for 10 minutes. Unmold and let cool completely on the rack before cutting.
